‚ÄčNew Food Code Update

Recent revisions to the WA State Food Code eliminated a section that allowed coffee stands and other movable food stands to operate with water or wastewater holding tanks. These changes concern some permit holders generating media coverage - see New state rule could jeopardize some Washington coffee stands | king5.com. Environmental Health staff received several calls from operators about this. The changes go into effect September 1, 2022.

State law allows us to issue variances so existing stands can continue to operate with holding tanks. We are working to develop this process to make it easy for permit holders to request a variance. We do not anticipate that current permit holders will need to change their plumbing if they do not make substantial changes to their facilities.
